I know that it won't tick exactly on the markers. However my second hand is acting extremely erratic. It will tick forward, slightly backward then forward to the next mark. It's like it over ticks at first then tries to correct itself. I have been wearing my Datejust for about 3 years, the second hand just stopped working today, ugh! It stays in the same place and just pulsates. Not sure what is happening with it. That sounds absolutely normal. The crown issue is to do with the gearing, turn it in the opposite direction first and then slowly pull it out. Regarding the second hands, make sure you wind it more than 25 full turns, and the second hand will start to work My submariner is having this problem, the age of the watch is around 3 yrs old and bought brand new. When I pulled out the triple lock crown for time changed, I realized the seconds hand are still moving and I am able to change my time.
