You cannot change when the date changes by setting or fiddling with it. The date changes every 24 hours, automatically as the movement goes through it's 24 hour cycle. The hands are a mere visual representation. If the hands are showing that the date changes at 2200, then the hands have been installed at the incorrect position. Some watch movements, both quartz and mechanical, will be permanently damaged by changing the date at the wrong time. Others will momentarily bind up, but will release by cycling through 24 hours.
